When summer gets here and the vegetables are overflowing in the garden, zucchini squash is one of my favorites. So are green beans, okra, cucumbers, yellow squash and so many more, I love all of them! I’ve made a zucchini casserole for years and my kids love it, but since going KETO, I’m looking for healthier recipes for the foods I love. This one is a true winner!
Keto Cheesy Zucchini
- 3 medium zuccini, sliced (about 4 cups)
- 1 small onion, sliced very thin
- 8 oz. pepperjack cheese
- 2 tbsp real butter
- 1/2 cup heavy cream
- 1/2 tsp garlic powder
The zucchini, onions and cheese will be added in 3 layers. Grease a 9×9 oven-safe dish.
Place one layer of zucchini and onions. Add salt and pepper to taste, then add a layer of cheese. Repeat twice more.
Put butter, heavy cream and garlic powder in the microwave for about a minute, until the butter has melted. Stir.
Pour the butter mixture over the zucchini layers evenly.
Bake in a preheated 375º oven for about 45 minutes. The top will be golden brown.
