When my kids were small, they loved eating cookies. I usually made homemade cookies, but sometimes I’d buy cookies at the grocery store too. At some point, and I do not remember exactly what it was, we came up with cake mix cookies. I assume we didn’t have cookies, so we made them from a cake mix that we did have. This came to be a favorite for the kids and it was so easy and cheap! Yes, EASY and CHEAP! That really matters to a working mom with three kids.
Yesterday, I was going through the pantry trying to find something to make. I saw a cake mix and it took me back to those cake mix cookie days with my kids. So, I decided to make some. When I started mixing it up, I brought out my Pampered Chef brownie pan, which I love, love, love! I decided to brownies instead of cookies. I made the mix the same way, but folded in some pecans and pressed the mix into the brownie pan after I sprayed it with cooking oil spray. They turned out awesome! Give these a try. You won’t be sorry.
