Weird name, but a delicate little cake that’s super easy to make. It’s so light and delicious, it simply melts in your mouth.
One Egg Hot Cake
- 1/4 C shortning
- 1 C sugar
- 1 egg
- 1 C self-rising flour
- 3/4 C milk
- 1 tsp vanilla
- 1/2 tsp salt
Cream the shortning and sugar together. Add the egg and beat well.
Add flour and milk alternately, beat well. Add vanilla, mix all together until blended well.
Cook in preheated 375º oven for about 20 minutes. Cake will be lightly brown on top.
Icing
- 4 tbsp butter or margarine, melted
- 1 C confectioners sugar
- 4 tbsp milk
In a saucepan, melt the butter. Add the sugar and milk, stir and melt together.
Pour over the cake while the cake is still warm.
