Kat’s soup- my kid’s favorite. I know it’s a funny name, but here’s the story.

I worked with  a lady years a go, we called her Kat, short for Katherine. She was a very small woman with a very big heart. She was full of love and laughter for all those around her. She shared this easy soup recipe with me one rainy day, telling me she used to fix it for her kids when it was raining. It really doesn’t even sound good when you glance at the ingredients, but it sure taste mighty fine! Give it a try and let me know what you think.

KAT’S Soup

• 1 lb. ground beef
• 1 small onion, chopped
• 2 cans Veg-All
• 1 can chili
• 1 can tomato soup
• 1 can Ro-Tel
• 1 can cream corn
• 1 can water

Brown the ground beef with the onion, drain off the grease.  Combine the meat with all other ingredients in a 3qt. pot. Simmer til the soup is at the desired consistencey.
