This peanut butter cookie recipe is so easy, the kids can make it themselves. Only three simple ingredients, you probably have them all without having to run to the grocery store. These turn out soft and chewy with just a slight crunch on the edges. They are melt-in-your-mouth good.

Peanut Butter Cookies
Preheat oven to 325º. Mix all ingredients together until well blended.
Roll into balls about 1 1/2″ size. Putting mix in the refrigerator for 15-20 minutes helps the dough roll easier. Or you can just spoon it out without refrigeration.
Place balls 2″ apart on an ungreased cookie sheet. Flatten each cookie with a fork dipped in flour to make a criss-cross pattern on the top or you can leave them as drop cookies if you like. Bake for 18 minutes. Let cool and serve.
* For a special touch, dip half of each cookie into melted chocolate and sprinkle chopped nuts on top.

Today I am making the amazing and simple cookies. I also have been cleaning out and rearranging the panty. I found a partial bag of dark chocolate chunks. There were only a few in there, but my OCD would not let me throw them out, even though they were out of date by a few months. Does that make me a bad person? I hope not!
I made the cookies and pressed a couple of the chocolate chunks down in the middle before popping them into the oven. It looked like little equal signs on each cookie. But it tasted…….. AMAZINGLY GREAT!!! The chocolate was melted just enough to make them ooooey, goooey, YUM!
